The FDA has released “Food Security Preventive Measures Guidance for the Food Industry”.
The Food Safety and Inspection Service (FSIS) of the US
Department of Agriculture (USDA) has published “FSIS Security Guidelines For Food Processors”.
Following are excerpts from the introductions of these two documents.
“These guidelines represent current thinking
on the kinds of measures that food establishments may take to
minimize the risk that food under their control will be subject to
tampering or other malicious, criminal, or terrorist actions.”
They are suggested to be used as “tools to
assess security measures and to make revisions to improve security and emergency preparedness.”
