The USDA recommends that “all food facilities develop and implement a food security plan using established risk
management principles.”
These principles are the framework for our TRAP-IT® Food Security Plan. Specifically, it is a Triangular Risk Assessment
Process dealing with three critical elements:
| Threats | are defined as people with intent to adulterate food products. |
| Targets | are unsecured food products that include raw materials, work in process, finished goods. |
| Access | is the physical connectivity between Threats and Targets. |

The TRAP-IT® Food Security Plan provides you with a plan – specific to your facility – which lets you comply with all the relevant
FDA, FSIS/USDA and other food industry security guidelines. Specifically, the plan
- Documents potential risks to your particular facility
- Assesses strategies and tools currently used to deal with these risks
- Identifies an internal food security response team
- Establishes training of your personnel
- Creates a methodical record-keeping program
- Provides a structure that can be independently audited
Your Plan becomes a living document for ongoing amendments as employees, regulations and circumstances change and evolve.

The Plan is comprised of two parts.
Part One of your plan is general and can be distributed to the public without compromising security. This enables you
to announce that you are concerned with public safety and that you have taken steps to safeguard that.
Part Two of your plan contains specific information about your facility, your processes and your personnel.
It also describes countermeasures that you have developed which must be kept confidential. We provide you with
specific ways to protect this part of the plan.

Implementation of your Plan minimizes the likelihood of adverse incidents but if one does occur, you will have immediate access to
emergency contact information. You will also have clear guidance on each step to take to deal with it.

If you have limited resources, you might need to contract out some security countermeasures to a security company. The Plan’s complete description
of your facilities and needs will help you get the most accurate bids based on only what you need. This can save you money.
The comprehensive, user-friendly plan also makes it easier for your Human Resources people to implement and document your
training programs.
